The Silence Of The Lamb Burger

Clarice Starling: Lambs. The lambs were screaming.

Hannibal Lecter: They were slaughtering the spring lambs?

Clarice Starling: And they were screaming.

Hannibal Lecter: What became of your lamb, Clarice?

Clarice Starling: They turned it into ground lamb & mixed a 1/2 pound of lamb with 4 pieces of streaky bacon minced fine. Then they added 1 teaspoon of Greek spice & a few dashes of Maggi seasoning. They divided the lamb & bacon mince into 2 balls & smashed them in a sizzling hot cast iron skillet. Cooked for a couple of minutes until a good crust formed, then flipped & topped with feta. They stacked the patties on a toasted bun with tzatziki, spinach, tomato, & pickled red onion. Then they added a side of Greek spice crinkle fries & tzatziki for dipping.

Hannibal Lecter: Sounds like it would be lovely with a nice Chianti, Clarice.

GREEK SPICE
1 tablespoon dried oregano
1 teaspoon dried basil
1 1/2 teaspoons kosher salt
1 tablespoon onion powder
1 1/2 tablespoon garlic powder
1 teaspoon black pepper
1 teaspoon dried thyme
1 1/2 tablespoons sweet paprika powder
1/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg

Place ingredients in a medium bowl and mix thoroughly with your fingers. Store in an airtight container.

TZATZIKI

TZATZIKI
7 ounces Greek yogurt
1/3 hothouse cucumber, unpeeled and seeded
2 tablespoons sour cream
1 tablespoon freshly squeezed lemon juice
1/2 tablespoon rice wine vinegar
3/4 teaspoon  dried dill (or 1/2 tablespoon fresh minced dill)
2 cloves garlic, minced
1 teaspoon kosher salt
1/4 teaspoon black pepper

Put the cucumber in a colander and sprinkle it with a tablespoon of salt to draw the water out. Cover with a plate and set something heavy on top. Let sit for 30 minutes. Drain well and wipe dry with a paper towel.

Place all ingredients in a food processor or blender and blend until smooth. Store in an airtight container in the fridge.
