TOFU FIGHTERS
I've had a years long battle with tofu. I've used it in both pro & home cooking but every recipe, sandwich, or dish always ended up with "Meh" tofu. Meh texture. Meh flavor. I pressed the hell out of it to remove moisture. I marinated & seasoned it like a madman. I sauteed cubes - baked slabs - & deep fried planks. All to MEH results.

Then, last week I had two revelations. First, I took myself back home & learned to fry. Super or extra firm tofu pressed to take out any extra moisture, cut into pieces, allowed to dry for 15 minutes, then coated in corn flour. Skillet fry until crispy.

The second revelation? If you are trying to remove moisture - don't marinate. Create flavor with a sauce or glaze. In this case a gochujang pineapple glaze that makes this tofu perfect for a sandwich, ramyun topping, or just a simple bar snack.

NUGGET ME NOTS
I've never really been much of a chicken nugget fan preferring wings or tenders over what often is shaped meat glue. However, a recent seitan worship tangent into chickwheat while listening to Patrice Rushen meant I had to try making vegan nuggets.

Chickwheat is made by cutting vital wheat gluten with an equal or slightly larger amount of chickpeas. It results in something surprisingly close in taste & texture to chicken. To keep this vegan, I used the genius @mythicalkitchen idea of using Ranch dressing rather than eggs for the coating. I'll never coat with eggs ever again!

A MEATLESS LOAF
Heading into my 4th year of expanding my plant-based culinary skills with another waypoint in my Loaf Quest. I love meatloaf but have never really succeeded in creating my own recipe. Given current budget limits & culinary exploration, I decided to go vegetarian. Portobello & cremini are the "meat" here - umami provided by sage, thyme, oregano, & caramelized onion. Replaced the usual ketchup with my Sweet Lightnin' BBQ sauce. The taste was great but sadly I need to work on the binders. Did not really "loaf" per se. That's all a part of recipe R&D. It still made a delicious topping for a black beans & rice bowl.

A very solid birria fest last night from my fave local Mexican grocer @plazaortegany As an instant noodle obsessive, the Birria Ramen crushes it. The combo of the Cup Noodles, consomme, stew beef & cilantro truly hit the spot! Also got the Quesabirria (left side of plate in pic #2) A great take on a quesadilla - cheesy & beefy - but a bit of a challenge to dip in the consomme (though challenge gladly accepted). By the way, the consomme here is stellar - salty, a bit spicy, with some extra beef tossed in for good measure. If I had any criticism, it was the birria tacos. I do love Plaza Ortega's choice of small double tortilla tacos (& their fillings are brill), but here I wasn't really feeling it. Not fried enough to hold up against the consomme dip. Still - I'd gladly do this whole spread again ANYTIME, was happy @wecantourthat had to wait due to a Saturday rush (busy = good!), & I'm happy to have a brill Mexican grocer/taqueria at the end of my bland block.

This #TBT post proves I'm not all seitan & veg recipes all the time. This is the Rib Meat sandwich from my old Q joint, the Cha Cha Hut. I'd take any leftover ribs or ribs not good enough to sell as ribs, chop them up, simmer in my house sauce, & serve on locally baked rolls. Messy as hell but worth the napkins.
