DO YOU LIKE BEAN ENCHILADAS?
The things I am not into include yoga, health food, & cheesy casserole style enchiladas. It quite possibly why - despite making tons of tacos & burritos - I never make enchiladas. Well, until I discovered a better enchilada method. Essentially a wet taco, the corn tortilla is fried, dipped in sauce, then filled with beans (in this case refried black beans) or meat. A bit of cheese, sour cream & radish finish it off. No more mushy tortillas or gloopy cheese. Just please pair with a nice margarita & not a pina colada.

GETTIN' BUDAE JJIGAE WIT IT
This Meatless Monday finds me with the fever for the flavor of a fully vegan version of Korean Army Stew while keeping the sausage & SPAM. A seitan jjajang sausage subs in for hot dogs. Seitan spam (yes - vegan spam - see my last Monday post) & bacon cured seitan sub in for SPAM & pork belly. Every thing else - mushrooms, kimchi, rice cakes, ramen noodles, tofu, & gochujang broth - are the usual ingredients. I was actually surprised how well seitan worked in this stew. It looks complex & has quite a few ingredients but it actually incredibly simple to make.

I'M A MAGIC (VEGAN) SPAM
When researching a vegan budae jjigae recipe, one arrives at the question "Can you make vegan SPAM?", and some would answer "SHOULD you make vegan SPAM?" As I am occasionally a culinary monster & iconoclast, my answer to both questions is "Yes."

Essentially a seitan spiced ham (which BTW where SPAM gets its name) that is compressed, cut into blocks, steamed, and then cured. The 2nd pic shows a air dried spam & a bacon cured spam. it fries beautifully, makes a killer BEC, & worked perfect in the budae jjigae (recipe for that coming soon).

That thing where you order delivery for baked ziti & garlic bread from a once favorite local joint only to have it be so bad you have to make a homemade batch three days later to erase the memory & actually satisfy the craving. I understand how hard it is for restaurants right now but there is simply no excuse for letting standards slip. And honestly it's extremely difficult to eff up ziti & garlic bread.

The return of one of my fave IG sandwich makers @hatewich & #TBT has me looking back to a year ago when I made this culinary abomination. His challenge when I was working on the "I Wanna Be Your Hot Dog" zine resulted in a crime against tubular meat. A lonely char dog monster overlooks fried ham on pepper jack cheese crisps. The 2nd photo shows the suggested eating method where the Char Dog Abomination is put out of its misery. This is the nightmare Kid's Keto Menu item you never asked for. I'm not proud of this, but I'm not ashamed either.

This recipe is really more akin to Sgt. Pepper's The Movie than the iconic Beatles album. Regardless, my apologies to The Beatles. You deserve better.
